What we're snacking on during COVID19 #StayAtHome Orders
For our family, we are entering Week 4 of social distancing and stay at home orders for our state and metro area.
In Week 1, we were bummed about canceling our Spring Break travel plans to California. We launched a Facebook pop-up challenge group “Kids in the Kitchen” -- to inspire fellow families to cook with their kids and try some new, healthy recipes during this time! We had tons of fun recording LIVE cooking videos, making new connections and going live with Memphis Moms Blog!
In Week 2, we started to grasp what it would mean to school at home and work-from-home with our family of four 24/7. I wrapped up my 25 Secrets to a Busy Mom’s Kitchen eBook and daily videos giving it all away!
And for Week 3 -- finally some sunshine for watching our chickens grow, starting a garden and even more family bike rides. With no end in sight, we are thankful for everything we have and really want to spend this time connecting with and supporting others. We also got to participate in the Front Steps Project!

Today I will share what WE are snacking on… and how to whole-food your pantry with the good stuff.
We follow a whole-food based lifestyle -- meaning most (90% ish) of our foods are in plant/life form -- whole vegetable, fruits, nuts, seeds, spices & herbs, as well as fish/meat/eggs. We do still have *some* processed foods in our house for quick meals or complicated dishes I don’t desire to make from scratch, but a majority of our foods are purchased single-ingredient.
Our countertop is brightly adorned with fresh fruits for quick snacks. High in antioxidants, sweet & juicy, fruits are a great way to pep up your kids.
Our Top 5 Fruits*:
Bananas
Easy peel clementines
Apples
Plums
Melon
*We also keep frozen mango, blueberry and cherry in the freezer year-round for smoothies.
Dried Superfoods (Mason jars on the counter!)**
Raw nuts: Almonds, Sliced Almonds, Brazil Nuts, Pecans
Cacao nibs (pair with a dried fruit)
Dried Fruits (kept in the pantry)
Mix and match dried ingredients for a trail mix! Kid-approved snacks!
Quick Prep Snacks
Hummus with Radishes, Carrots, Celery
Sunflower Butter w/ Celery + Raisins (Ants on a Log) [Trader Joe’s for SunButter]
Apple & Almond Butter (with sea salt and cacao nibs)
Cheese Sticks (organic)
Ordinarily, we purchase most of these items at COSTCO -- but have also included Amazon links here, too, if you are avoiding local shopping (or don’t have a Costco nearby!). Trader’s Joes is also a great place for snacks -- especially our beloved plantain chips (purple monkey bag!).
Keep hydrated! Water, water water -- and the occasional sparkling water or coconut water keeps us afloat!
